March Madness

Wow, has it really been that long since I posted??? Okay well this month has been a whirlwind... We celebrated our birthdays, spent a laughter filled weekend in Hollywood acting like kids at Universal Studio's, met many new people and ate ourselves into a coma at Buca DiBeppo and Bubba Gumps... I am the luckiest girl to have my Best friend and my partner wrapped up into one handsome, fun and loving package. Of course the recovery time was brutal, lol.
My son was offered a baseball scholarship to Azusa Pacific and I was offered a job by my previous employer, SCE. Looks like it is back to fancy clothes, high heels and the corporate life. Things are a changin' baby! I feel so blessed and overwhelmed at the same time. Oh did I mention, that I absolutely love my new Shape-ups??? Dance season is here and I don't care if I look funny walking through dance comps with silly shoes.... They rock!

Crispy White Pizza


Taken from the Hungry Girl website.... Can't wait to try it!


PER SERVING (entire recipe): 200
calories, 3.25g fat, 930mg sodium,
33g carbs, 7g fiber, 7g sugars, 17g

Prep: 10 minutes
Cook: 20 minutes

Ingredients:
1 large low-fat, high-fiber, burrito-size tortilla with about 100 calories (like this kind by La Tortilla
Factory)
1/3 cup fat-free ricotta cheese
1 tbsp. shredded part-skim mozzarella cheese
1/4 cup thinly sliced onion
1/4 tsp. garlic powder
1/8 tsp. salt, or more to taste
Dash black pepper
4 thin slices plum tomato
4 fresh basil leaves
Directions:
Preheat oven to 375 degrees.
Put tortilla on a baking sheet sprayed lightly with nonstick spray. Bake in the oven until slightly
crispy, 3 - 5 minutes per side. Leave oven on.
In a small bowl, mix ricotta cheese with mozzarella cheese. Set aside.
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add onion and, stirring
occasionally, cook until softened and slightly browned, about 5 minutes. Immediately stir onion
into cheese mixture. Add garlic powder, salt, and pepper, and mix well.
Spread cheese-onion mixture evenly on top of the tortilla. Top with tomato slices and basil
leaves. If you like, sprinkle with a dash of salt.
Return pizza to the oven and bake until hot, about 5 minutes. Slice and enjoy. Pizza for one!

Life is good.....

There is something about sunshine that just makes life better. As much as I have come to love the snow and the mountains, I can smell spring in the air and I can almost hear the ocean calling my name.... Awwww, I can't wait to walk in the sand and hear the waves crash.... I guess you can say it is my happy place.

While I was at the gym yesterday I noticed an older couple - probably late 70's early 80's. They each had on a simple gold wedding band and matching tee shirts. They were speaking sign language to each other and he kept reaching over and turning up the speed on her treadmill.... she would giggle and turn it down. I couldn't help but watch them, they were too cute. At the end of my workout, they happened to be walking out in front of me, he reached over and pinched her behind, she said "Honey, stop that" He came back with an, "I can't help it".... As they saw me behind them, she quickly apologized for her husbands behavior... and he quickly stated "How am I supposed to behave with a beautiful woman like you at my side".... I said "you two must be newlyweds".... She said "no, we have been married over forty years" he said "40 fun filled years". He put his arm around her and they walked to their car (a red mustang convertible)... I keep thinking about them, how cute they are... How lucky they are... and what is their story? Why the sign language when they can obviously hear and speak? How do they fill their days? What do they do for fun? Where do they take that convertible? Anyways... Here is to the delight that this couple brought me by just living life. Thank you!

Smile lines.....

I had a wonderful morning.... Yoga, prayer, no traffic, great coffee, the voice of a handsome man, perfect messages from both of my kids and the realization that my life is still good even though I didn't win the $355 million dollar lottery last night.... =) It seems nothing can bring me down today, not even these new wrinkles I spotted in the mirror! It bummed me out a bit, but then I remembered how I promised myself I would look for good in every situation, so these little age marks will forever be referred to as my smile lines.... I am thankful for all the smiles and laughter I have in my life now, I welcome the lines....

The little things....

Yesterday was one of those days when you stay in your jammies all day and nap often..... The snow was beautiful, the roads were closed and the company was perfect, as always. When it became necessary to actually get off the mountain, he began the ritual of shoveling the driveway, warming up my car and making sure I was ready to go. When he drove me down to the end road to get me to a plowed street, I watched him start his walk back up to the house and I realized that this is what makes my world a better place. I am so thankful to have somebody who thinks more of me then himself. I love when something so small and so normal touches me like this.... Thank you honey!
